Ingredients:

  • 2 lbs Heirloom tomatoes, assorted colors, cut into wedges
  • 1/2 cup Red onion, thinly sliced into half-moons
  • 1/2 tsp Kosher salt
  • 3 tbsp Extra virgin olive oil
  • 1 tbsp Balsamic vinegar
  • 1 tsp Honey
  • 1/4 tsp Cracked black pepper
  • 1/4 cup Fresh basil leaves, chiffonade
  • 2 tbsp Fresh Italian parsley, chopped
  • 1 tbsp Fresh chives, finely minced

Instructions:

  1. Place the sliced heirloom tomatoes and red onions in a large mixing bowl. Sprinkle with kosher salt, toss gently, and let sit for 5 minutes to draw out natural juices.
  2. While the tomatoes rest, combine the extra virgin olive oil, balsamic vinegar, honey, and black pepper in a small jar or whisking bowl. Shake or whisk vigorously until the dressing is emulsified and glossy.
  3. Pour the dressing over the salted tomatoes. Add the fresh basil, parsley, and chives.
  4. Using a wide spatula, gently fold the ingredients together until the tomatoes are evenly coated. Serve immediately.
