Ingredients:
- 2 lbs Heirloom tomatoes, assorted colors, cut into wedges
- 1/2 cup Red onion, thinly sliced into half-moons
- 1/2 tsp Kosher salt
- 3 tbsp Extra virgin olive oil
- 1 tbsp Balsamic vinegar
- 1 tsp Honey
- 1/4 tsp Cracked black pepper
- 1/4 cup Fresh basil leaves, chiffonade
- 2 tbsp Fresh Italian parsley, chopped
- 1 tbsp Fresh chives, finely minced
Instructions:
- Place the sliced heirloom tomatoes and red onions in a large mixing bowl. Sprinkle with kosher salt, toss gently, and let sit for 5 minutes to draw out natural juices.
- While the tomatoes rest, combine the extra virgin olive oil, balsamic vinegar, honey, and black pepper in a small jar or whisking bowl. Shake or whisk vigorously until the dressing is emulsified and glossy.
- Pour the dressing over the salted tomatoes. Add the fresh basil, parsley, and chives.
- Using a wide spatula, gently fold the ingredients together until the tomatoes are evenly coated. Serve immediately.
