Ingredients:
- 2 lbs mixed heirloom tomatoes, sliced into wedges
- 1/4 cup red onion, thinly shaved
- 1/2 cup fresh basil leaves, torn by hand
- 1/2 tsp flaky sea salt
- 3 tbsp extra-virgin olive oil
- 1 tbsp red wine vinegar
- 1 clove garlic, minced finely
- 1/4 tsp cracked black pepper
Instructions:
- Slice the heirloom tomatoes into uniform wedges, place them in a large mixing bowl, and sprinkle with flaky sea salt. Let them sit for 5 minutes to release natural juices.
- In a small jar or bowl, combine the extra-virgin olive oil, red wine vinegar, minced garlic, and cracked black pepper. Shake or whisk vigorously until the dressing is emulsified and opaque.
- Add the shaved red onions and torn basil leaves to the tomatoes. Pour the emulsified dressing over the mixture and toss gently until the tomatoes are glossy and evenly coated.
