Ingredients:

  • 2 lbs mixed heirloom tomatoes, sliced into wedges
  • 1/4 cup red onion, thinly shaved
  • 1/2 cup fresh basil leaves, torn by hand
  • 1/2 tsp flaky sea salt
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 clove garlic, minced finely
  • 1/4 tsp cracked black pepper

Instructions:

  1. Slice the heirloom tomatoes into uniform wedges, place them in a large mixing bowl, and sprinkle with flaky sea salt. Let them sit for 5 minutes to release natural juices.
  2. In a small jar or bowl, combine the extra-virgin olive oil, red wine vinegar, minced garlic, and cracked black pepper. Shake or whisk vigorously until the dressing is emulsified and opaque.
  3. Add the shaved red onions and torn basil leaves to the tomatoes. Pour the emulsified dressing over the mixture and toss gently until the tomatoes are glossy and evenly coated.
