Ingredients:

  • 2 (6 oz / 170g) Saku Ahi Tuna steaks
  • 1 tbsp (15ml) Avocado oil
  • 1 tsp (6g) Coarse sea salt
  • 1 tsp (2g) Freshly cracked black pepper

Instructions:

  1. Pat the tuna steaks aggressively with paper towels on all sides to remove surface moisture.
  2. Combine the coarse salt and cracked black pepper on a small plate. Press the tuna steaks firmly into the seasoning on all sides.
  3. Heat the avocado oil in a cast iron skillet over high heat until it just begins to shimmer.
  4. Carefully place the tuna in the pan; sear for 45–60 seconds per side and 15 seconds on each narrow edge.
  5. Remove the tuna from the pan immediately and let it rest on a cutting board for 2 minutes before slicing.
