Ingredients:
- 2 (6 oz / 170g) Ahi tuna steaks
- 2 tbsp white or black sesame seeds
- 1/2 tsp kosher salt
- 1/2 tsp freshly cracked black pepper
- 1 tbsp avocado oil
- 1 tbsp fresh lemon juice
- 1 tbsp low-sodium soy sauce
- 1 tsp toasted sesame oil
- 1/2 tsp garlic powder
Instructions:
- Pat the tuna steaks completely dry on all sides using paper towels to ensure a proper sear.
- Mix sesame seeds, salt, and pepper on a flat plate; press each side of the tuna firmly into the mixture to form a crust.
- Heat a cast iron skillet over high heat with avocado oil until the oil shimmers and barely smokes.
- Sear the tuna for 45 to 60 seconds per side without moving the fish to ensure a crust forms.
- Using tongs, quickly sear the thin edges of the steak for 15 seconds each.
- Turn off the heat and immediately add lemon juice, soy sauce, toasted sesame oil, and garlic powder to the pan.
- Quickly flip the tuna in the glaze for 10 seconds, then remove to a cutting board.
- Let the tuna rest for 2 minutes, then slice into 1/2-inch thick pieces against the grain.
